Honey Lime Enchiladas and Garlic Black Beans and Rice

oh, my.  I have a new love in my life.
Just look at it.
 This recipe is a must try.  I came across it a few months ago and we have had to have it several times since for dinner in our house.  So I just wanted to pass it on to all of you. I add more green sauce then it call for, so it's not as dry.
 As for the Garlic Black Beans and Rice.......that I came up with on my own and after a few tweaks I have come up with the perfect side dish for the enchiladas.
Here it goes:
2 cans of black beans
4-7 whole cloves of garlic cut in half (don't mince, you want just the flavor and you will need the cloves large enough to pick out of the beans later)
a pinch of Kosher salt
2 cups of cooked white rice (minute rice is great)

Cook beans and garlic on a low simmer for about 1 hour (if you can do longer the flavor is better)
 Once the beans have simmered, pick out all the cloves of garlic.  No one wants to bite into a whole clove of garlic so make sure to get them all out :)
Add the cooked rice to the beans, mix well and set them aside while you make these amazing enchiladas!
 Then dish up all the loveliness on a plate and enjoy!!
